What Is Potassium Benzoate?
Potassium benzoate is the potassium salt of benzoic acid, used as a food preservative in low-sodium product formulations. It dissociates in solution to release benzoic acid, which is the active antimicrobial agent. It is particularly valued in products where sodium content must be minimized for dietary or health reasons.
What Is It Used For?
Used as a preservative in low-sodium beverages, fruit juices, and condiments where sodium benzoate would be unsuitable. Inhibits the growth of moulds, yeasts, and certain bacteria in acidic foods.
