Ascorbyl Palmitate (E304) β What You Need to Know
What Is Ascorbyl Palmitate?
Ascorbyl palmitate is a fat-soluble ester of ascorbic acid and palmitic acid, designed to provide antioxidant protection in lipid-based foods where water-soluble vitamin C cannot function. It is hydrolyzed in the body into ascorbic acid and palmitic acid, both normal dietary components. It is widely used in infant formula, vegetable oils, and supplements.
What Is It Used For?
Prevents oxidation and rancidity in oils, fats, and fat-containing foods. Used as a vitamin C source in fat-based formulations and as a synergist with tocopherols.
Safety Assessment
Fat-soluble form of vitamin C, making it effective as an antioxidant in oils and fats where water-soluble ascorbic acid cannot work. Hydrolyzed in the body to ascorbic acid and palmitic acid, both normal dietary components. EFSA set group ADI of 1.25 mg/kg bw/day in 2015, but noted this was based on limited data, not safety concerns. Widely used in infant formula as an antioxidant.
Based on current evidence, Ascorbyl Palmitate is rated Safe with a score of 9/10. This is 1.9 points above the average for antioxidants (7.1/10). Last reviewed by regulators: 2015.
