What Is Green S?
Green S is a synthetic triarylmethane dye that produces a green color in foods. It is one of the most restricted food colorings globally, banned in numerous countries including the US, Canada, Japan, and several Nordic and European nations.
What Is It Used For?
Produces green shades in canned vegetables, confectionery, and desserts. Most commonly associated with the green color of canned peas and mint sauce in the UK.
Safety Assessment
Banned in numerous countries due to insufficient safety data. Not approved in US, Canada, Japan, or several Nordic/European countries. EFSA re-evaluated in 2010 and noted data gaps but maintained authorization with ADI of 5 mg/kg bw/day. The Panel noted the need for additional studies. Limited use even in countries where it is approved. Part of the group of dyes facing increased scrutiny.
